Angela's Courgette Cake Recipe


The delicious courgette cake which Angela made for me is now just a memory but I intend to make it myself before the courgettes finish up for this season. Angela also gave me a recipe for Courgette soup to try.Angela loves baking and cooking so all of her recipes are tried and tested.
Courgette Cake
250grms Flour
1 tsp baking powder
1tsp bicarbonate of soda
1tsp salt
250grms caster sugar
25grms sultanas
2 mashed bananas
3 eggs beaten
250 grms grated mixed carrots and courgettes
100ml sunflower oil

Preheat oven to 150% gas mark 4
Line 9in tin with greaseproof paper
Loose bottom spring tin is ideal if you have one.
1. Sift flour,baking powder,bicarbonate and salt into mixing bowl
Add sugar and sultanas and mix well
Add beaten eggs, mashed bananas,stir in grated vegetables , finally adding the oil.Beat mixture thoroughly for 1 minute to a slightly thick lumpy texture.

Pour into tin and bake for 1 hour.Test centre of cake with a clean skewer
Leave to cool in tin for about 10 mins,remove from tin and leave to cool completely on a wire rack

Frosting
90grms cream cheese
1/2 tsp vanilla essence
250 icing sugar
Beat together and decorate with a little grated courgette

I have never heard of a Courgette Cake! Sounds DELISH though!

Oh that looks so so good.

I am all out of courgettes now, so it is onto the plums and plenty of plum sweet things.
