Supersize Me!

This supersized courgette was posing a bit of a problem as to how to deal with it. While following the further adventures of Bilbo since he left Cork, I found he was going to nipitinthebud in Gloucester in the UK.While checking out the blog, I came across an intriguing recipe for Marrow Cream.It was made in Bavaria and is posted under Cedric's Jam and cream I am not sure if it is a jam or curd but cream does not describe my one! I made 2 pots last night using the recipe but it only used half of the marrow so today I made two more pots and had enough to fill a pie also.The marrow yielded 4 lbs of flesh after peeling and scooping out the seeds in the centre. The two outside pots are today's which are of a creamier colour than the other two.The taste is reminiscent of lemon Meringue Pie so I made one just to try it out
I baked a blind pie crust and used some of the marrow cream as the pie filling. I would have to say I find it very sweet.
The finished Marrow Meringue Pie!It tastes delicious,very sweet but with a lemony flavour too,so I would not use too much of the filling. It could also be used by placing some of it on a pastry base and covering with a sponge mixture.It will be useful to have a ready pie filling to hand for the winter.
Update!!
Nipitinthebud has left a comment about the sugar quantity! Just used half of the sugar and it is sweet enough!

Hi Peggy, you beat me too it with trying our Cedric's recipe! My supersized marrow is still sitting on the kitchen table but I'm determined that this week is the week to try out the cream recipe (maybe with Bilbo if he's not too tired from all the other things he's been helping me with!) Cedric said the recipe turns out a little bit translucent when you hold it up to the light so I'd say your jars look exactly as they should. your pie looks delicious :o)

This is one time I wish I had a supersize marrow, so I could try out this recipe, but maybe next year.

Your marrow cream looks like it would have gone well with the pancakes I had this morning.

nipitinthebud: it is translucent so maybe the photos make it creamier looking.It is very,very sweet!
Lorna; I have spent some time gazing at the beautiful stuff in your online shop!I have bookmarked it for future visits.
mangocheeks: I know,we all hope to head off the supersized marrow dilemma maybe next year we will Cedric's recipe will encourage us to leave a couple to their own devices!

That looks most unsusual & very delicious ! You won't believe it, but just yesterday I baked a lemon meringue pie here in Africa ;) great minds think alike, hey ?!

What a great idea Peggy, I have a giant courgette now too, I got fed up with eating them and have left them to see how big they will really get! Must try this recipe though, lemon meringue pie is my favourite so must give it a go.

Hahaha! I love it! We are all growing enormous courgettes without even trying.
This is a prime example of the useful-ness of blogs. I have gained SO many courgette recipes since I started blogging, I will never be lost in the courgette glut again!

I'm making mine as we speak and one collossal courgette reduces so much in size that I've gone for half the sugar. Tastes lovely and sweet so I imagine it could be quite sickly with the full amount.

I can't wait to get my hands on a HUGE courgettes/zucchini, so that I can make Marrow Cream....it sounds delicious. Lemon Meringue pie is my all time favorite, the Marrow Cream, with the reduced amount of sugar, sounds more nutritious than Lemon Meringue. Surely it must be...*smile* I liked the idea of trying it on pancakes too...
